Use this opening checklist to capture cold equipment temperatures across your operation. Log static thermometer readings for the custard table, walk-in fridge, freezer, JAR cooler, and catering cooler. Test two items from each filled location and record internal temperatures. Sanitize temperature probes before and after each test.
