Use this quarterly preventive maintenance checklist to service restaurant equipment and facilities. Tasks include cleaning and descaling ice machines, washing condenser filters, clearing drains at drink stations, replacing shake machine belts, checking fryers and grill temperatures at 350 degrees, cleaning HVAC supply and return grills, inspecting walk-in fan covers, drain lines, and refrigerant tubing, logging lighting and plumbing repairs, chemically cleaning rooftop condenser coils, replacing belts and filters, verifying refrigeration gaskets, and recording temperatures for coolers at 36 degrees and freezers at 1 to 10 degrees. Note water filter dates and replace annually.
