Use this Wednesday BOH cleaning checklist to standardize restaurant back of house sanitation. Tasks cover Henny Penny and open fryers including exterior, gauges, lids, gaskets, springs, pipes and casters; handwashing, four compartment and vegetable sinks checking for leaks, shine and clean traps; and the breading table with shelves washed and sanitized, bottom refrigeration scrubbed, doors and gaskets cleaned and filter cleaned. Assign staff, record date and preparer, note issues and escalate repairs to a manager.
