It also checks oven cleanliness, routing and delivery bag readiness, chiller organization, and general hygiene practices like handwashing, pest control devices, soap and sink availability, and ventilation cleanliness. Storage, racking, tray handling, and back-of-house security are included, along with washing area practices and toilet upkeep.
