Use this BOH monthly restaurant performance test to assess back-of-house execution and identify improvements. Evaluate line execution and food presentation, food quality across appetizers, entrees, and desserts, and prep standards such as recipe adherence, cooling, labeling, and timeliness. Verify portion control, dish area practices and sanitation, and equipment temperatures and chemical ratios. Confirm uniform policy compliance and review administrative items including employee paperwork, certifications, I-9s, schedules, specials, and inventory deadlines. Rate each area from 1 to 5 to benchmark performance and drive consistent quality and compliance.
