It covers dining room setup, clean menus and tables, outdoor seating readiness, plants and table flowers, product availability, a clear and clean kitchen pass, staff knowledge of smoking and eating areas, clean and stocked toilets, clutter-free bars and customer areas, proper uniforms, clear fire exits, tidy staff rooms, adequate glassware, prompt storage of deliveries, completion of due diligence records for kitchen and FOH open and close, training compliance, reasonable stockholding, weekly food and beverage stocktakes, working lightbulbs, functioning essential equipment with maintenance logged, and placing water on tables as guests are seated.
