Pre-Operational Checks for Food Processing (v2.0)
by Saul Pinto, from the Community
This pre-operational checklist helps food processing teams verify sanitation and readiness across key areas before production. Sections cover cutting and tying tables, tanks, draining racks, wash and strip areas, dye mixers, tubing and boxing stations, QC tables and tanks, casing cleaning lines, and coolers. It prompts checks for tool integrity, packaging materials, brine filter condition, hoses off the floor, soap and towel availability, empty garbage bins, ceiling condition, and footbath pH at entrances and during maintenance. Version 2.0 adds a new check for standing pools of water. A verification sign-off section supports accountability and audit readiness.
