Conduct comprehensive HQ audits across food service and facility areas with this checklist. Inspect fish room sanitation, FIFO rotation, knives and cutting boards, chemical storage, hand sinks and required handwashing signage, and the three compartment sink. Record refrigerator and freezer temperatures, warehouse storage six inches off the floor, shop cleanliness, trash removal, equipment condition, hose organization, and fire extinguishers. Include bathrooms, exterior waste bins, used oil containers, offices, windows, and inventory room controls.
