Learn how to make classic honey comb, an airy, crunchy candy perfect as a dessert garnish. Ingredients: 400 g caster sugar, 10 tbsp golden syrup, 2 tsp bicarbonate of soda. Heat sugar and syrup in a heavy-based pan to 150 C, then quickly whisk in bicarb. The mixture will foam; pour onto a lightly oiled tray to cool and set, then crack into pieces. Store in an airtight container and keep in the freezer to prevent sweating; keeps for up to 3 months.
