Cellar Audit Checklist for Bars and Restaurants
by Sammie McHenry, from the Community
This cellar audit checklist helps bar, pub, and restaurant teams inspect and maintain safe, hygienic beverage cellars. Verify cellar temperature control, cooler performance, and CO2 alarm operation; check safe storage of cylinders and kegs, FIFO rotation, and clear walkways. Assess cleanliness of floors, walls, drains, sinks, and equipment including ice machines, stillages, keg connectors, and barrel lifts. Confirm availability of PPE, first aid, eyewash, fire extinguishers, and litmus paper. Include beer line cleaning schedules, proper storage of cleaning solutions, and checks for Coke BIB coolers and nozzles. Use this template to standardize audits, reduce risks, and improve compliance.
